Miwasakura Brewery
Miwasakura Brewery is located in the countryside just south of the urban centre of Miyoshi, in a basin of rice fields. The large white brewery buildings rise above the smaller houses around.
Miyoshi has a big difference between day and nighttime temperature, which results in robust rice with a lot of starch, ideal for brewing. The area is known as the birthplace of several celebrated sake rice varieties — Hattanishiki, Hattan, and Senbonishiki widely used in Hiroshima. Hattanishiki is highly prized for producing elegant and refreshing sake. It’s typically used for Junmai and Junmai Daiginjo sake, creating beverages with a balance of rice flavour and aromatic notes, and is used to make high-quality, food-friendly sake. Senbonishiki is used to produce premium sake with characteristics like a fruity, green apple, melon, or lychee aroma and flavour.
Miwasakura sources most of its rice from the locality and mills the rice on site. The brewery is unusual in that its master brewer is also a Buddhist priest.
