During the Edo period, the market supplied fresh produce and seafood to Kanazawa Castle and surrounding neighbourhoods, supporting the dietary needs of both samurai and townspeople. Its proximity to the Sea of Japan made it particularly important for the distribution of fish and shellfish, which remain central to the market’s identity. The Sea of Japan’s colder waters and strong seasonal variation result in a wide range of species appearing at different times of year, shaping local eating habits and culinary traditions.
